Ingredients

• 4 red potatoes
• 3 tablesspoon of olive oil
• 1 onion, chopped
• 1 green bell pepper, seeded and chopped
• 1 teaspoon of salt
• 3/4 paprika
• 1/4 teaspoon of ground  back pepper
• 1/4 cup chopped fresh parley

Equipment

• Large  skilled
• Plate
• Pot

Steps

• Bring a large pot of salted water to boil add potatoes and cook until it is tender but still firm, about 15 minutes
• Drain the potatoes and cut them into 1/2 inch cubes When they are cool, in a large skillet, heat I tablespoon of olive oil over medium high heat. Add onion and green pepper.
• Cook about 5 minutes stir it often until all mixes are sloft. Transfer it to a plate and set  aside pour the remaing 2 tablespoons of oil into the skilled and turn the heat to medium - high.
• Add potato cubes, salt, paprika and black pepper. Cook ad stir occasionally until potatoes are browned about 10 minutes
• Stir the onions, green peppers, and parsley and cook for another minute. Serve if while hot.
